About the Domaine

N°2 Le Matelas is a wine from the Domaine de Chamans, a family-run vineyard. The 14 hectares of vineyards, surrounded by scrubland and forest, are located in the southern foothills of the Montagne Noire in the Minervois region of the Languedoc. Isolated from other vineyards, the family continues their own non-interventionist agricultural philosophy, based on organic and biodynamic principles.
Certified by Demeter and EcoCert (since 2010).

All wines are vinified variety by variety in French oak barrels, foeders, concrete tanks and a concrete egg.

Vinification process

Destemmed grapes are fermented in small concrete tanks for 6 weeks before being pressed. Grenache and Cinsault are blended and then aged for 12 months in a foeder. Monrvèdre is kept in a tank on fine lees before the final blend is made. After a light filtration, the wine is bottled according to the moon phases to preserve its aging potential, with a minimum of added sulfur.
