About the Domaine
Open Now Cuvée GSM 2017 is a wine from the Domaine de Chamans, a family-run vineyard. The 14 hectares of vineyards, surrounded by scrubland and forest, are located in the southern foothills of the Montagne Noire in the Minervois region of the Languedoc. Isolated from other vineyards, the family continues their own non-interventionist agricultural philosophy, based on organic and biodynamic principles.
Certified by Demeter and EcoCert (since 2010).
Characteristics of the Vineyard
- Planted area: 14 ha
- Altitude: 220-300 m
- Direction: South oriented
- Age of the vines: 12-25 years
- Soil type: Clay and limestone
- Yield: 35-40 hl/ha
- Pruning method: Gobelet
- Density: 4000 sticks/ha
- Harvest: Manually picked, with additional selection on a sorting table.
All wines are vinified separately in French oak barrels, concrete tanks and a concrete egg.
Vinification process
The grapes are destemmed and undergo alcoholic fermentation in concrete tanks for 3 weeks. After malolactic fermentation they are blended. The wine is then aged for 24 months on fine lees in concrete tanks and lightly filtered before bottling, all according to the phases of the lunar cycle.
